Broccoli Eggs
Ingredients
1 whole small broccoli head (approx. 180–200g)
2 whole eggs
1 tsp olive oil / ghee
Salt to taste
Black pepper to taste
Red chilli flakes (optional)
Oregano / mixed herbs (optional)
Method
Wash the whole broccoli and trim only the thick bottom stem, keeping the head intact.
Steam the broccoli for 4–5 minutes until slightly tender (not too soft).
Heat a flat pan and add 1 tsp oil/ghee.
Place the broccoli flat side down on the pan.
Using a masher or heavy spatula, press and smash it gently into a flat round shape.
Season with salt, pepper, chilli flakes, and herbs on top.
Make 2 small gaps/pockets within the smashed broccoli.
Crack 2 eggs directly into the pockets.
Cover with lid and cook on low flame for 3–4 minutes until eggs set.
Remove lid and cook uncovered for 1 minute for slight crispiness.
Serve hot.
