1 slice multigrain or sourdough bread (40g)
50g fresh paneer (low-fat), crumbled
ΒΌ ripe avocado (about 70g)
1 tsp extra virgin olive oil or cold-pressed coconut oil
1 tsp lemon juice
Pinch of black pepper
Pink Himalayan salt to taste
1 tsp finely chopped coriander or mint
Optional toppings: microgreens or finely chopped tomato
Instructions
Toast the bread slice until crisp and golden.
In a bowl, mash together avocado and paneer using a fork. Keep it slightly chunky for texture.
Add lemon juice, black pepper, pink salt, chopped coriander/mint, and olive oil. Mix gently.
Spread the mashed mixture generously over the toasted bread.
Top with microgreens or tomato if desired for color and crunch.
