Popeye Kebabs
Ingredients
100g paneer, grated
1 cup finely chopped spinach (or mixed greens: spinach + methi + coriander)
1 small onion, finely chopped
1 green chilli, chopped
1 tsp ginger–garlic paste
¼ tsp turmeric
½ tsp cumin powder
½ tsp garam masala
½ tsp amchur or lemon juice
Salt to taste
1–2 tsp besan (only if needed for binding)
1 tsp ghee/olive oil for shallow frying
Method
Prepare the mix:
In a bowl, combine grated paneer, chopped spinach/greens, onion, green chilli, ginger–garlic, and all spices.
Mix well.
Add a little besan only if the mixture feels too soft.
Shape the kebabs:
Form small round or oval kebabs using your palms.
Cook:
Heat a pan with a little ghee or oil.
Place kebabs and cook on medium heat.
Flip when golden; cook until both sides are crisp and lightly browned.
Serve:
Enjoy with mint chutney or hung-curd dip.
