Dates & Dry Fruit Bites

Ingredients:
1 cup soft seedless dates (Medjool or soaked regular dates)
¾ cup mixed dry fruits – choose a mix of:
Almonds
Cashews
Pistachios
Walnuts
Instructions:
1. Prepare the ingredients:
If using regular dates, soak them in warm water for 10 minutes, then drain completely.
Roughly chop the dry fruits.
2. Lightly roast the nuts (optional but recommended):
In a dry pan, roast the chopped nuts on low flame for 3–4 minutes until they become aromatic.
This enhances crunch and flavor. Let them cool.
3. Blend the mixture:
Add dates to a food processor and pulse until it forms a sticky paste.
Add the roasted dry fruits and pulse again 3–4 times — just enough to mix well while keeping some crunchy texture.
(Do not overblend; you want small bits of nuts visible.)
4. Shape the bites:
Remove the mixture and transfer to a plate.
Grease your palms slightly with water or oil.
Roll into bite-sized balls or flatten into bars and cut into squares.
5. Set and store:
Place them on a plate to firm up for 15–20 minutes.
Store in an airtight container at room temperature for 10 days or refrigerate for up to 1 month.
