Soya Chunk Salad
Ingredients:
50g soya chunks (dry weight)
100g cucumber, diced
50g tomato, chopped
50g capsicum, chopped
30g onion, finely sliced
1 tsp olive oil
1 tsp lemon juice or apple cider vinegar
Salt and black pepper to taste
Fresh coriander or mint for garnish
Instructions:
Boil soya chunks for 5–7 minutes until soft, then drain and rinse in cold water.
Squeeze out excess water and chop them into bite-sized pieces.
In a mixing bowl, combine soya chunks, cucumber, tomato, capsicum, and onion.
Drizzle olive oil and lemon juice, season with salt and pepper.
Toss gently and garnish with fresh herbs.
Serve immediately or chill for 15 minutes for enhanced flavor.
